How to cook
Chop the onions and braise them. To them add the chopped peppers. After 3-4 min., add the tomatoes, salt and black pepper to taste.
Once the vegetables have braised a bit, add the crumbled feta cheese and stir. Take off the stove and add 1/2 the chopped parsley. Stir and pour the mixture into a buttered oven dish.
Make 6 indentations in it and break an egg into each. Put the oven dish to bake in a 392°F (200 °C) oven for about 10 min. or until the eggs crisp. Take the oven dish out and sprinkle with the remaining parsley.
If desired, you can stick some chili peppers here and there throughout the dish.
