How to cook
Wash and chop the meat into pieces. Mash the dried mushrooms and spices together.
Add the ginger, black pepper, cumin and salt.
Sprinkle the meat with this, transfer to a clay pot and stir well so that the mixture gets distributed evenly. Pour in the wine (or beer), oil and stir again. Leave the meat in a cool area for at least 2 hours to marinate.
If the meat has absorbed the marinade, pour in 1 cup water. Dice the butter and distribute it even in the clay pot.
Cover with a lid and put it in a cold oven to bake at 356°F (180 °C) for 45-50 min. After it's baked, cover with a lid and return to the oven for another 10-15 min.
Once it's ready, turn off the oven and leave the clay pot to rest for at least another 25 min. before serving.
