Crumble the yeast in a little water, add the sugar and 1 tbsp flour. Cover it and leave the yeast to bubble. Sift the flour and make a well in it. Pour in the yeast, oil, and salt. Knead a dough and gradually pour in the flour.
The dough needs to be soft and nonstick. Put the dough in an oiled container and cover it with stretch foil or a towel. Leave it to triple in volume. Divide it into 2 and form it into a bread without pressing it.
Put the bread in a floured oven dish. Sprinkle it with flour and make slight incisions on it with a sharp knife. Cover it with a towel and let it rise again for about 20 min. Bake the bread in a preheated 356°F (180 °C) oven for about 40 min. on the middle element.
