Ingredients

  • chicken - about 3.5 lb (1.5 kg)
  • butter - 1/2 cup (125 g)
  • garlic - 1 tbsp, powdered
  • black pepper - 1 tsp, ground
  • cumin - 1/2 tsp, ground
  • savory - 1 tsp, dried, crumbled

How to cook

Wash the chicken, cut it down the middle along the breast bone and put it in a ceramic oven dish or in baking paper, so it doesn't stick.

You can carefully peel a bit of the skin from the back and smear the resulting pocket with salt, savory, powdered garlic, black pepper and cumin, plus put a few pieces of butter in it.

Smear the chicken on all sides with the spices, turn it with the skin facing up and arrange long, thin slices of butter on it.

Put it in a preheated 356°F (180 °C) oven and bake.

Periodically, baste the chicken with the melted butter from the bottom of the oven dish using a large spoon. Once it's ready, turn it over to the other side for 5-10 min. for it to gain an appetizing crisp on the bottom as well.
