Wash the lamb meat, dry it and rub it with salt, paprika and black pepper. Leave it for 30 min. in the fridge to take in the aromas of the spices.
In the meantime, chop the onions and spearmint finely. Put them in a deep oven dish, pour 1 cup of warm water over them. Add the meat and bake in a preheated 392°F (200 °C) oven until it gets an appetizing crust.
Then, cover tightly with foil and bake at least 3 hours at 356°F (180 °C). After 2 hours pass, be sure to check whether or not you need to pour in a little more water.
Shortly before taking the meat out of the oven, remove the foil, in order for it to gain a nice crunchy crust. Serve the lamb with sauteed potatoes or other garnish of your choice.
