Arabic Garlic Paste
- garlic - 12 cloves
- cumin - 2 tsp, ground
- lemon zest - 1 tsp
- lemon juice - 1 tbsp
- sesame seeds - 2/3 cup (160 g)
- water - 1/2 cup (125 ml)
Put the unpeeled garlic cloves in a tray and bake about 10 min. until softened.
Peel them. Mash the peeled garlic cloves and mix them with the cumin, sesame seeds and lemon zest.
Add the mixed together water and lemon juice and stir until you get a smooth, homogeneous mixture.
