Clean, wash and chop the vegetables. Braise the onions and garlic in a suitable pan and once softened, add the spinach.
Season with salt and black pepper and stir well.
Once the spinach softens, make a well in the veggies for each egg. Break the eggs into the wells and cover with a lid.
Lower the stove and cook depending on how you like your eggs. Take it off the stove and serve with yoghurt and chopped parsley.
