Wash the pig ears, boil them in salted water for about 40 min.
They need to become tender and well boiled. Take them out and drain from the water, leave to cool briefly, then cut them into strips.
Season with black pepper, salt and cumin. Grill them, transfer the cooked ears to a pot with a lid.
Add the onions, chopped into crescents, to them. Season with lemon juice, soy sauce and serve.
