Clean the peppers of their seeds and stems, bake them, saute and peel. Parboil the tomatoes briefly in boiling water, then peel them.
Chop the onion into slices and saute in heated oil. After 10-15 min., add the coarsely chopped peppers and after another 5-10 min. - the coarsely chopped tomatoes.
Once the dish is left to cook in just oil, add the beaten eggs. Stir and sprinkle with crumbled feta cheese. Finally, season the mish mash with chopped parsley and sprinkle with a little black pepper if desired.
