Wash the tongue and put it to boil with black pepper grains, bay leaf and a spoon of vinegar. Peel the boiled tongue and cut it into slices.
Arrange in an oiled tray and season with the spices. Heat the butter and olive oil in a container on the stove. Braise the garlic in them briefly but without letting it burn.
Pour the aromatic butter over the tongue, shake the tray and put it in the oven to crisp.
