How to cook
Peel the zucchini and cut them into very thin slices, salt them and leave aside.
In a pan, heat a little oil, braise the finely chopped onions until golden, add the mince and stir until it breaks apart into bits. Salt and season with black pepper to taste, fry until golden.
Separately, cut the tomatoes into slices, the garlic and parsley finely. Whip the eggs with the cream to a smooth mixture, add the parsley and salt to taste.
Your ingredients are ready, now it's time to arrange the casserole.
Arrange half the zucchini in a slightly oiled oven dish, distribute the mince evenly on top and sprinkle the chopped garlic on.
Arrange the remaining zucchini, then finally a layer of tomatoes, sprinkle lightly with a little oil.
Pour on the prepared topping, put the oven dish in a preheated 392°F (200 °C) oven and bake about 40-45 min.
Try it, it's really simple, yet very delicious and juicy at the same time.
