Dice the zucchini and saute them briefly with the finely chopped onion. Sprinkle with black pepper and salt. Add the tomato, diced and peeled of its skin. Remove from the stove and let the stuffing cool.
Tear balls from the mince. Flatten each one and then shape it into a muffin in a buttered muffin tray. Line all the muffin cups with mince.
Fill each muffin cup in the tray with the stuffing using a spoon. Be sure to put a piece of processed cheese in each.
Bake in a preheated 356°F (180 °C) oven until ready. Shortly before taking it out of the oven, cover with pieces of cheese and let them crisp.
