Wash the peppers and cut them down the middle. Remove the seeds and arrange the resulting halves in an oiled oven dish.
In a bowl, mix together the crumbled feta, eggs, grated (or diced) zucchini and finely chopped parsley. Stir well with a fork.
Stir the pepper halves with the filling using a fork. Bake in a preheated oven until ready. Shortly before they're ready, you can add grated cheese on top and crisp it briefly.
