Ingredients

  • zucchini - 2 lb (1 kg)
  • tomatoes - 5.5 oz (150 g)
  • rice - 2/5 cup (100 g)
  • oil - 2/5 cup (115 ml)
  • milk - 1 2/3 cups (400 ml)
  • eggs - 3
  • parsley - 1 bunch
  • paprika
  • salt

How to cook

Peel the zucchini, cut them into round slices, salt them, drain for 10 min. and fry lightly in the heated oil.

Take them out and saute the grated tomatoes in the same oil for 5-10 min. Add the rice, paprika, pour in 1 cup warm water and salt to taste.

Leave it to boil until the rice takes in water, then stir with the finely chopped parsley.

In an oven dish, arrange layers of zucchini and rice, pour on the beaten eggs with the milk and put it in a moderately preheated oven to bake.
