Clean the oyster mushrooms well, wash them and cut them into pieces (strips).
Blanch the pieces about 10 min. in boiling salted water and take them out to cool.
Separate the yolks from the whites. Beat the latter to snow. To the yolks, add the beer, flour, salt and black pepper.
Add the beaten whites to the yolk mixture. Combine the flour and breadcrumbs.
Roll the mushrooms in them, them dip them in the egg mixture and fry in heated oil, while flipping them over periodically until they're done.
Once you've taken them out, salt them on both sides.
