"You`ve only heard of but never tried them? Do you have any idea what you`ve been missing?"

Ingredients

  • water - 2 cups (480 ml)
  • olive oil - 4 tbsp
  • flour - 3 4/5 cups (900 g)
  • salt - 2 tsp
  • sugar - 2 tsp
  • yeast - 2 tsp, dry
  • for smearing
  • olive oil - 2 tbsp
  • eggs - 2 yolks
  • water - 4 tbsp

How to cook

Sift the flour with the salt and mix them with the olive oil, water, sugar and dry yeast. Knead the resulting dough for 5 min., then leave it in a warm area to rise.

Once it doubles in volume, divide it into 3 parts, form them into balls. Roll them out into circles with a diameter of 6″ (15 cm), smear them with olive oil, egg yolks, water and cover with aluminum foil. Leave them for 20 min. to rise again, then roll them out again to a crust 1/4 thick.

Bake the pitas in a preheated 446°F (230°C) oven for about 10 min. and serve warm. They're perfect for making large sandwiches because they're hollow on the inside.
