Peel the potatoes and cut them into coarse cubes. Chop the peppers and onions into medium pieces, peel the tomatoes and grate or mash them.
Pour a little oil in the clay pot, arrange the meat, onions, peppers, potatoes and tomatoes.
Pour in 2-3 cups water, depending on the size of the clay pot. Sprinkle with salt and spearmint or parsley.
Put the lid on the clay pot (you can plug the lid with a little dough made of flour/water if it allows). Bake in a moderate oven about 2 hours.
