Once the boiled tongue has cooled, peel it and cut it into slices. Using a brush, smear the pieces with mustard. Roll each one in flour with black pepper and other dry spices of your choice.
Dip them in the beaten eggs with soy sauce, then roll in breadcrumbs and put to fry in heated oil until golden.
Serve the crumbed pork tongue with a garnish of potato salad, baked or fried potatoes or other garnish of choice.
