  • apricots - 4.5 lb (2 kg)
  • sugar - 3.5 lb (1.6 kg)
  • lemon juice - of 2 lemons
  • vanilla


Clean the apricots of their pits. Put them in an oven dish and sprinkle with the sugar. Leave them overnight to release their juice.

Put them on the stove and boil about 50 min. on moderate heat, while periodically removing the foam. Finally add the lemon juice and vanilla.
