How to cook
Blend the almonds with 1/2 the sugar in a blender, then add the baking powder to them.
Separately, beat the soft butter with the remaining sugar to a fluffy cream and mix with the blended almonds.
Beat the egg whites with the pinch of salt to a thick snow.
In a water bath, melt the chocolate and to it add the almond mixture, egg yolks, stir well and finally stir everything with the whites carefully.
Pour the mixture into a lightly oiled tray with baking paper and put the cake to bake in a preheated 356°F (180 °C) oven for about 40 min.
Optionally, you can serve the Torta Caprese sprinkled with powdered sugar.
