How to cook
Make 6-8 cuts along a whole piece of meat, so it opens up like a fan. Sprinkle with salt and pepper to taste.
Put it to bake in a moderate oven until semi-cooked.
Cut the cheese and tomatoes into the same number of thick circles as there are cuts on the meat.
Put a slice of tomato and slice of cheese in each cut. Return to the oven to finish baking.
Garnished with baked potatoes. For a more interesting flavor, you can sprinkle the meat with a little orange juice.
