How to cook
Wash the zucchini, peel and cut them into 2 down the middle. Also make cuts about 1/2″ (1 cm) apart down their length but not all the way through. Cut the rest of the vegetables into round slices.
Arrange the zucchini in an oiled oven dish, while alternating between tomatoes, mushrooms, onions and chopped garlic in the incisions you made. Open up the zucchini with vegetables out like a fan.
Sprinkle with salt, black pepper, a little oil, dill and bake for 50 min., then sprinkle generously with cheese and finish baking for another 10 min..
Serve with the garlic-mayonnaise sauce.
