How to cook
Cut the eggplant into very thin slices, salt and stir.
Dice the peppers and braise them in a little oil, add the finely chopped onions and saute under a closed lid until softened.
Peel and dice the soft tomatoes, add them to the peppers and saute until the vegetables soften.
Add salt to taste, half the grated garlic cloves, sugar and 1 pinch of each spice. Blend the mixture in a blender and pour it in the tray evenly.
Chop the zucchini and firm tomatoes into thin slices.
Start alternating the veggies - eggplant, tomato, zucchini in a circle in the tray in a circle until you've filled it and covered the sauce.
Sprinkle with the remaining spices, the rest of the finely grated garlic and pour 1 tbsp oil over the veggies.
Cover the tray with aluminum foil, put it in a preheated 392°F (200 °C) oven and bake about 65 min. Remove the foil and briefly crisp the tasty Ratatouille with Fantastic Sauce.
