Cut the meat into coarse pieces. Put them in a tray with olive oil and bake for 40 min. at 356°F (180 °C), while turning them over and stirring periodically.
Take the tray out and add the veggies, garlic cloves and spices to the meat. Pour in the broth and cover with aluminum foil.
Return to the oven and let saute for 1 hour.
