How to cook
Put the egg whites in an enameled container and start beating them in a water bath on low heat.
Keep beating nonstop until they melt and turn to a snowy mass. Grind the walnuts with 2 tbsp of the sugar to prevent them from sticking and add them to the whites.
Add the remaining sugar and stir the mixture well. Remove from the heat, then add the 2 powdered vanillas. Stir. Once the mixture cools fully, scoop from it with moistened hands and shape balls the size of a walnut.
Arrange them in an oiled oven dish with some distance apart. Bake in a moderate oven until reddened.
