Clean and wash the vegetables, tear the cauliflower into rosettes, cut the carrots into round slices, cut the bell peppers into 4, the celery into strips.
Put vegetables of each kind, of the desired proportions, in the jars. Add the salt, oil, sugar, garlic, black pepper, bay leaf, finely chopped parsley and celery leaves.
Top the jars off with water, close with caps and sterilize for 8 min. after the water reaches boiling point.
