Clean and wash the chicken. Peel the onions and chop them finely.
Clean the peppers of their seeds, the tomatoes of skins, grate the carrot. Cut the veggies into suitable pieces (you can grate the carrot coarsely).
Heat the oven to 392°F (200 °C).
Pour the oil in a deep oven dish and put the onions in it. Put it in the oven and smother the onions until golden. Add the rest of the veggies. Stir and bake until they change color.
Wash the rice thoroughly under running water, add it to the veggies. Cook 2-3 min., while stirring occasionally.
Season with salt, white and black pepper, add a pinch of curry. Pour in the broths and stir. Put the chicken (smeared with oil, seasoned with salt and pepper beforehand) in the middle of the oven dish, on top of the rice and veggies.
Bake the chicken until golden and until the rice softens, while the liquid evaporates. Serve it sprinkled with fresh parsley.
