How to cook
Wash the peppers. You can peel them with a potato peeler, it's a bit hard but it works with fleshy peppers. Remove the stems and seeds. Cut the peppers into pieces.
Peel the zucchini and dice them. Peel the eggplant as well, cut it, put it in a bowl, salt and pour in water. Leave as is until you've prepared all the vegetables for cooking.
Pour in oil and a little water. Turn the stove on and saute. Add the other veggies as well (the eggplant needs to be drained of water and rinsed) and chopped fresh parsley.
Boil the dish until ready. You can leave it with a little liquid or boil until it's left in just the oil. You can serve it with a little boiled rice.
