Put the milk in a large pot on the stove to boil. Once boiling, add the salt and boil 5-6 min.
Then add 15 drops of cheese yeast. Leave to boil another 10 min. on the stove. Finally, add the citric acid.
Continue boiling the milk another 15 min. Remove from the stove. While still warm, pour it in a clean cheesecloth and press well.
Leave it that way for 2 hours. Put it in the fridge afterward, where it needs to sit for 2 days at least. After the 2 days, it's ready to eat.
