Cut the carrot and onion finely (grate the carrot if desired).
Braise the vegetables until golden in heated oil. Dice the zucchini, add it to the pot and leave it to saute.
Remove the seeds from the pepper, cut it finely along with the tomatoes. Add them to the other veggies and stir.
Wash the rice and drain it, add it, pour in hot water and season with salt and pepper to taste. Cook on low heat until the rice is ready, while stirring periodically.
Serve with chopped fresh parsley.
