How to cook
Heat the oil in a pot and braise the chopped onions, peppers, eggplant, zucchini, add the okra and green beans, peeled and chopped potatoes. Add the chopped tomatoes at the end.
After they're slightly braised, transfer the veggies to a clay pot or oven dish, add the chopped parsley, salt to taste and sprinkle with the paprika.
Top off with 1 1/2 cups hot water and put the vegetarian guvec to bake in a moderate oven for about 45 min. Optionally, add chili peppers as well. You can prepare this vegetarian guvec in a pot on the stove if you don't have a clay pot.
