Wash the vegetables.

Turn on your grill or oven. Put the peppers and eggplants to bake on both sides.

After the peppers are baked, smother them in a plastic bag, to make them easier to peel. Peel the peppers and eggplants.

Grate the onions on a grater and drain them, do the same for the garlic.

Put the eggplants, peppers and tomatoes through a meat grinder or mash with a hand blender.

Mix the veggies in a bowl with the olive oil, a little vinegar, salt and black pepper to taste.

Notes: I recommend cooking the veggies on a grill or coals. It's best to have both types of peppers but you can have all red or all green.

I used home-grown garden tomatoes. You can braise the tomatoes with the garlic and onions but personally I don't recommend frying.find similar recipes here
