Mix all of the ingredients in the order listed. Finally, knead and leave to sit for 3 hours in the fridge.
After the elapsed time, divide up the dough into 8 round pitas, each about 6″ (15 cm) in diameter. Cut each one into 8 triangles, like a cake.
In the widest part of each triangle, put cheese filling and wrap into scones. Smear them with yolk on top and bake in a moderate oven until reddened.
Sprinkle the scones with some more grated cheese and leave in the oven for a little while longer until the cheese melts.
