Clean the carp of its insides and scales. Cut off the head and then the rest of the fish into slices.

Season with salt and black pepper. Roll the pieces in flour and fry in hot oil on both sides until golden.

For a more attractive presentation, arrange the fillets onto a platter with lettuce leaves in such a way that the fish looks like it's whole again.
