Dice the vegetables. Braise the onions and carrots. Then add the red pepper, potatoes and spices. Stir well.
Fill the peppers with this filling, distribute any left over around them. Pour in a little water and bake at 392°F (200 °C) for 35-40 min.
Toward the end of baking, pour on the beaten eggs, arrange pieces of cheese and finish baking.
