Ingredients

  • eggplants - 9 lb (4 kg)
  • peppers - 2 lb (1 kg), red
  • green tomatoes - 17.5 oz (500 g)
  • salt - 1 tbsp or to taste
  • parsley - 1 bunch

Preparation

Bake the vegetables, cool and peel them.

Chop them coarsely, add salt to taste and finely chopped parsley. Stir well.
