How to cook
Preheat the oven to 430°F (220 °C). Clean the cauliflower and tear it into rosettes, then put them for 10 min. in boiling water. Drain and leave aside.
Clean the onions and chop them finely. Mash or press the garlic, grate the cheddar. Beat the eggs. In a pan, pour 2/5 cup (100 ml) water and saute the onions, garlic and cauliflower. Stir well and pour into the tray.
To make the topping, mix the eggs, yoghurt, mustard and cheddar. Season with salt and pepper. Pour the topping over the cauliflower. Bake 15-20 min. in a moderate oven until golden.
