Arrange the bread slices like a layer in a small, oiled tray. Fill the spaces in between them with 1 bread slice cut into pieces.
Heat oil in a pan, braise the finely chopped onion and pepper until softened.
Add the peeled and diced tomato, season with salt and black pepper. Remove from the stove to cool a little.
In a bowl, beat the eggs with a fork, add the mixture from the pan, the diced sausages of choice, pieces of olives and parsley.
Add 1/2 the grated cheese to the egg mixture and stir. Distribute it over the bread layer. Sprinkle with the remaining grated cheese on top.
Bake in a preheated 374°F (190 °C) oven for 15-20 min., with just the top element on for the final 10 min. for a golden crust.
Cut it into 4 parts, sprinkle with green onion stalks and serve with tea. Quick, easy and tasty.
