Clean the veggies. Cut the potatoes, tomatoes and onions into thin slices. Pour the oil in at the bottom of the clay pot. Arrange the potatoes, tomatoes and onions, with a block of feta cheese on top.
Season with salt and pour in the vegetable broth. Cap the clay pot and bake in the oven for 20 min.
Take the clay pot out, sprinkle with grated cheese, arrange the colorful peppers (cleaned of seeds and cut into round slices ahead of time).
Break an egg over the very top and return to the oven without the lid. Bake until the egg is ready.
