Crumble the feta cheese in a bowl and mix it with the egg white.
Cut 1 of the puff pastry sheets into 4 squares and then into thin strips.
Sprinkle them on randomly in a form laid out with baking paper.
Distribute the feta cheese on top and sprinkle with the chopped parsley.
Repeat this process with the other puff pastry sheet.
Throw the strips on haphazardly over the feta and smear with the egg yolk beaten with yoghurt.
Sprinkle sesame seeds and bake in a preheated 392°F (200 °C) oven about 15-20 min.
