Put the milk + yeast + sugar in a bowl and stir until effervescent.
Once ready, add 4 tbsp olive oil and start pouring it into 2 1/2 cups (600 g) of the flour in a bowl, to which you've added 1 tsp salt beforehand. Knead and leave it to double in volume.
Knead again with the remaining flour and shape it as desired. Smear it with egg yolk. Let it sit for 30 min. and bake in a preheated 338°F (170 °C) oven about 30 min.
