Wash the quinces, cut them into pieces, remove the cores and seeds. Arrange in a tray laid out with aluminum foil.
Heat the apple juice with all of the spices and raisins. After boiling on low heat for 5 min., take it off the stove.
Stir it with the honey and pour everything from the pot (juice + spices) over the quinces. Optionally, you can stick the cloves in the fruit pieces.
Cover tightly with foil and bake the quinces in a moderate oven about 35-40 min. Serve the baked quinces cooled.
