Beat the eggs with the powdered sugar, vanilla, add a pinch of salt.
Gradually add the milk and butter while stirring. Then add the carbonated water. Gradually add the flour as well.
Sift the mixture through a sieve. Leave it at room temperature about 30 min.
In a dry pan with a nonstick coating, put a little of the butter for frying, heat it and pour in 1 ladle of the pancake batter. Fry 1-2 min. on each side.
Optionally, smear with extra butter.
Stack the pancakes one atop another in a pot, in order to soften them.
