How to cook
Soak the pork leg in water for about 1 hour. Cut off any membranes and fat if present.
Dry it, cut it into thick steaks and sprinkle generously with coarse sea salt. Leave them for 24 hours in a cold area, then wash with cold water.
Leave them to drain well. Once you've mixed together all of the spices, roll the pork steaks in them, while pressing in order to get a nice, thick layer of savory and all the other spices.
Make a hole in each piece and tie it with thread, hang up in a dry and ventilated area.
