Wash and dry the fillet. Julienne it. Add salt and a little ground black pepper.
Let the meat sit for about 15-20 min. In a bowl, mix 5-6 tbsp breadcrumbs, the same amount of sesame seeds and corn flour.
You can also use corn semolina. Beat the 2 eggs. Put baking paper in a tray. Preheat the oven to 428°F (220 °C).
First dip the meat in the eggs, then in the breading. Bread them well on both sides and arrange in the tray with some space in between. Sprinkle each piece with a little oil or olive oil. Bake 35 min.
