Quick and Tasty Salty Cheese Cupcakes

  • cheese - 14 oz (400 g)
  • eggs - 4
  • flour - 4 tablespoons
  • milk - 1 cup
  • olives - 10, pitted (green)
  • capers - 2 tablespoons
  • ham - 10.5 oz (300 g) slices
  • black pepper
  • cumin


Grate the cheese coarsely.

Beat the flour with the milk and add the eggs. To the mixture add the grated cheese, cut into round slices olives, the capers, cumin and black pepper.

Put a slice of ham in each nest of a pre-greased muffin tray and fold it in a bit. My muffin tray holds 12 muffins. Cut the rest of the ham into cubes and add it to the cheese mixture and stir again.

Distribute the cheese mixture into each ham nest with a teaspoon, sprinkle with black pepper and cumin on top. Put the tray in the lower part of a preheated 374°F (190 °C) oven with the fan on.

They're ready after 15-20 min., after they redden.

They're exceptionally tasty both hot, served with fresh salad, and cold, served as an appetizer.
