Boil the meat until foam appears. Chop the potatoes into coarse cubes and put them in an oiled tray. Sprinkle them with the salt, black pepper and universal spice.
Wash the boiled chicken and rub it with the salt and spice mix for chicken. Smear it well with the butter and put it on top of the potatoes.
Pour a few cups of water over it, to cover the potatoes halfway. Put a bay leaf at each end of the tray.
Cover the dish with foil and bake 30 min. at 356°F (180 °C). Then remove the foil and bake until ready. Upon serving, sprinkle with parsley.
