Beat the eggs with the sugar well, add the yoghurt in which you've added the baking soda beforehand, 1 tbsp oil, the vanilla and flour. Stir the mixture well until you get a thick, homogeneous mixture.
Heat the oil in a deep container. Scoop from the mixture with a spoon and put it in the heated oil.
Fry on low heat, to prevent the fritters from burning. Take the ready fritters out with a slotted spoon and put them on paper towels to drain off the excess oil.
Arrange the fritters in a plate. Optionally, sprinkle with powdered sugar, honey, chocolate topping.
