Wash the potatoes, peel (in another version of this recipe they're left with the peels), cut them coarsely, wash again and drain from the water.
Sprinkle with salt and lemon juice. Then fry until about 80% cooked, take them out of the oil to cool and then leave for about 2 hours in the fridge.
Fry until golden, take them out of the oil and sprinkle with oregano.
