How to cook
Put the cleaned and washed tripe to soak in water with vinegar for at least 3 hours in order to get rid of the unpleasant smell. Dice the onions, garlic and peppers and braise them in a little oil.
Add 2 tbsp flour, the spices and 8 1/3 cups (2 L) water. Once the water comes to a boil, add in the diced tripe as well. Boil for 60-80 min. on the stove.
Once the dish is ready, remove from the stove. Sprinkle with chopped parsley and crumbed feta cheese, then serve.
